Cuke’s and Onions

I got this recipe from one of Harold’s aunts.  {print recipe}

1 cup vinegar (I use apple cider vinegar)

1 cup water

2 teaspoons salt

1/4 teaspoon pepper

6 Tablespoons sugar

3 – 4 cucumbers

1 onion

Slice cucumbers and onions.  Mix remaining ingredients and pour over cuke’s and onions so they are covered.  Refrigerate.

Asparagus and Mushrooms

I was looking for a new way to cook the asparagus tonight.  I had some leftover mushrooms in the fridge, so I decided to combine them.  I did not have onions, or I would have added them as well. {print recipe}

2 mushrooms


1/2 teaspoon Mrs. Dash Garlic and Herb seasoning

dash of salt and pepper

1 tablespoon olive oil

Heat the olive oil in a skillet and then add the remaining ingredients.  Saute the vegetables until they are crisp tender.

Roasted Butternut Squash

A friend told me about this.  It is a different way to eat squash.

Roasted squash

Butternut squash

olive oil

season salt

Turn oven on to 400º.  Peel and scoop out the seeds of the butternut squash.  Cut into 1/2 inch cubes.  Toss with a little olive oil and season salt.  Toss in a pan and roast the squash in the oven until tender.
