Baked Chicken Chimichangas

I got this recipe off the internet, but can’t remember where.  I did make a few changes.  {print recipe}

2 cups chicken broth

1 – 8 ounce can tomato sauce

1 Tablespoon taco seasoning

1 1/2 cups rice

1/2 onion, diced

Combine the chicken broth, tomato sauce, and taco seasoning.  Bring to a boil and add rice.  Simmer on low and stir once in a while until rice is done.

Flour tortillas

shredded chicken

sliced olives

diced onions

grated Monterey jack cheese

1 can refried beans

Have everything ready to go and then heat the flour tortillas up so they can be folded or rolled.  Spoon some refried beans on the tortilla then add some rice, chicken, onions, olives, and cheese.  Roll up the tortillas, tucking in sides so the filling doesn’t fall out.  Place on greased cookie sheet and bake at 350º for about 25 minutes.

Serve with some guacamole, sour cream and cheddar cheese for topping.
