No Fuss Chicken

I got this recipe from a blog friend.  It was simple to put together, and it tasted really good.  I did add some seasoning and used olive oil instead of butter.  We will definitely make this again.  {print recipe}

1 whole chicken cut up into pieces

2/3 cup whole wheat flour

1 teaspoon dried sage

1 teaspoon dried basil

1 teaspoon salt

1 teaspoon paprika

1/4 cup olive oil (or more as needed)

2 cups chicken broth

Cut up the chicken and rinse.  Mix the flour with seasonings in a bowl.  Heat up the oil in a skillet.  Dip the chicken in the flour and then brown in the oil.  Place in the crock pot when the pieces are browned on all sides.  Once the chicken is browned, add 1/4 cup of the flour mixture to the skillet and then discard the rest.  Stir until the flour mixture is smooth and bubbly.  Slowly add the chicken broth and stir until it comes to a boil.  Stir and boil for one minute.  Pour the mixture over the chicken and cook on high for 2 1/2 hours or so.  I ended up doing it for 4 hours while we were at church.  The chicken was very tender and flavorful.  We served the gravy over mashed potatoes.
