Rainy Day Goulash

I found this recipe several months ago and the family really likes it.  As usual, I have made changes to what I would normally have in my pantry. {print recipe}

Rainy Day Goulash

1 pound ground beef

1 onion, finely diced

12 ounces elbow macaroni

1 quart diced tomatoes (undrained)

1 can diced green chilies

2 cans tomato sauce (8 oz each)

1 can cream of mushroom soup (or cream soup mix for one can)

1 teaspoon each of salt, pepper, and garlic powder

1 Tablespoon taco seasoning

2 cups grated cheese

Cook the noodles until just about done.  Brown the onions and ground beef.  Combine the tomatoes, green chilis, tomato sauce, seasonings, and soup in a bowl.  Add noodles and drained beef and onion mixture.  Mix well and put in a sprayed casserole pan.  Bake at 350º for 20 minutes or so.  Top with cheese and continue to bake for another 10 minutes or so.
