Roasted Butternut Squash

A friend told me about this.  It is a different way to eat squash.

Roasted squash

Butternut squash

olive oil

season salt

Turn oven on to 400º.  Peel and scoop out the seeds of the butternut squash.  Cut into 1/2 inch cubes.  Toss with a little olive oil and season salt.  Toss in a pan and roast the squash in the oven until tender.
