Chocolate Peppermint Crunch Cookies

I got this off the Internet last year.  I like chocolate and I like peppermint.

2 cups flour

2 teaspoons baking powder

1/2 teaspoon salt

1/3 cup oil

4 squares unsweetened chocolate (I used 12 T. cocoa and 4 T. butter)

2 cups sugar

4 eggs

2 teaspoons vanilla

5 big candy canes, crushed

Combine flour, baking powder, and salt.  Set aside.  In a mixer bowl combine the oil, chocolate, and sugar.  Blend on medium speed.  With the mixer running, add the eggs, one at a time, followed by the vanilla, scraping the bowl as necessary.  There may be some small clumps of sugar in the batter at this point.  Add the dry ingredients and mix on low-speed.  Add the crushed candy canes.

Chill the dough for at least 2 hours.  Cover cookie sheets with parchment paper.  Scoop cookies onto cookie sheet and sprinkle with more crushed candy canes if desired.  Bake at 350º for 10 minutes.  Let sit a minute of so once done before you take them off the cookie sheet.
