We got this recipe from my parents when they were out here last fall. They got this recipe from friends of theirs. We have changed it a little bit as we like scrambled eggs better than the whole egg. I will post both ways.
1 box of turkey/chicken stuffing mix
bacon bits, or real bacon cooked and chopped
12 eggs, or 6 if you want to do scrambled eggs
Mix the stuffing mix up according to the package (we use half the butter called for). Once that has set for 5 minutes, fluff with a fork and then spoon the stuffing into 12 greased muffin cups. Make a well in the stuffing so that the stuffing is going up the sides of the cups.
If you use the whole egg, crack one egg into each stuffing cup. If you want, crack six eggs into a bowl and mix up with a fork. Divide the scrambled eggs between the 12 cups. Sprinkle with bacon bits, or bacon, and then top with grated cheese.
Bake at 350º for 30 minutes, or until the eggs are done.
