English Muffins

This recipe is from my Dad.  He would make these as we were growing up.  They are delicious when toasted.

English Muffins

1 cup milk, warmed

2 Tablespoons sugar

1 teaspoon salt

3 Tablespoons butter

1 cup warm water

1 package yeast

5 cups flour

cornmeal

Warm the milk, water, and butter until around 115º or so.  Add yeast and sugar and let proof.  Add remaining ingredients, and enough flour to make a soft dough.  Knead and place in a greased bowl.  Cover and let rise until doubled.  Roll out on some cornmeal about 1 inch thick.  Cut into 3 inch circles and place on cornmeal dusted board, or counter.  Let rise until doubled.  Bake on hot griddle until browned, about five to six minutes on each side.
