Tomatillo Salsa

I got this recipe from the internet.  It is very similar to the one I did when I made it fresh.  I wanted to make some and can it for the year.  This turned out good.

Tomatillo Salsa

6 cups tomatillos, chopped

2 cups onions, chopped

3 jalapeno peppers, chopped

6 garlic cloves, chopped

1/2 cup cilantro, chopped

1/2 cup lemon juice

2 teaspoons cumin

1 Tablespoon salt (I used half the amount)

1 teaspoon black pepper

Combine all ingredients in a large pot and stir fequently until mixture boils.  Reduce heat and simmer 20 minutes.

Ladle into pint jars, leaving a 1/2 inch head space.  Adjust lids, and process in a hot water bath for 20 minutes.
