Kid Kookies

This recipe was given to me by a lady in our Church.  When we were building our house, we lived in a 20 foot trailer.  This trailer did not have an oven in it.  We lived for 9 months in this trailer cooking in a crock pot, electric skillet, and a small toaster oven.  Her husband helped us on the house when he had time.  She would send a gallon jar over filled with these cookies for us.  They were very much appreciated.  She indicates on the recipe card that this is a basic cookie dough.

Kid Kookies

1 cup white sugar
1 cup brown sugar
1 cup crisco or peanut butter or butter (whatever you like, I do 1/2 peanut butter and 1/2 butter)
2 large eggs
1 tsp. salt
1 tsp. baking soda
1 tsp. vanilla
1 1/2 cups flour
3 cups quick oats

Optional items:
raisins, nuts, spices, applesauce (take away some sugar)

Mix the sugars and crisco until blended.  Add the eggs and sift the dry ingredients together.  Add to the sugar mixture and then add the oats.  Put onto an ungreased cookie sheet and bake at 400º for 8 – 10 minutes.
