Cornmeal Rolls

These are great plain, or you can use them as hamburger buns.

Cornmeal rolls

1/3 cups cornmeal
1/2 cup sugar
2 teaspoons salt
1/2 cup butter
2 cups milk
1 Tablespoon yeast
1/4 cup warm water
2 eggs, beaten
4 cups flour
melted butter

Cook cornmeal, sugar, salt, butter, and milk in medium saucepan until thick (like cooked cereal).  Cool to lukewarm.  Add yeast which has been dissolved in warm water.  Add eggs and flour to form soft dough.  You may need to add more flour.  Knead well on lightly floured surface.  Place in greased bowl; let rise.  Punch down, and roll out to 1 inch thickness.  Cut with 2 1/2 inch biscuit cutter.  Place on greased cookie sheet.  Brush with melted butter and sprinkle with cornmeal.  Let rise.  Bake at 375º for 15 minutes.
