We love to fix these when we have fresh berries and whipped cream.  You need an Aebleskiver pan to cook these.

2 cups buttermilk
2 cups flour
2 eggs, separated
2 teaspoons baking powder
1/2 teaspoon salt
1/2 teaspoon baking soda
2 Tablespoons sugar
4 Tablespoons butter, melted

Beat two egg whites until stiff.  Sift dry ingredients together.  Mix buttermilk, egg yolks, and melted butter together and add to dry ingredients.  Fold in the egg whites until combined.

Oil your pan and turn to just above medium.  Once the pan is hot, add some batter to each hole.  Turn as needed with knitting needle until a ball is formed.  Make sure it is cooked in the middle.  Serve with fresh sliced berries and whipped cream.
