Grandpa’s Pancakes

This was my Grandpa’s recipe for pancakes.  They are very good.  I have also made them with just milk as I don’t always have buttermilk on hand.


4 cups flour
1 Tablespoon baking powder
1 teaspoon baking soda
1 1/2 teaspoons salt
4 Tablespoons cornmeal
4 Tablespoons sugar
2 eggs, beaten
2 cups buttermilk
2 cups whole milk
2 Tablespoons oil

Sift all dry ingredients together in a large bowl.  Beat eggs, and add both milks.  (May need to add a bit more milk to make batter the right consistency.)  Mix only until dry ingredients are thoroughly moistened.  Stir in oil.

Pour by 1/4 cupfuls on 375º preheated griddle.  Bake until bubble form, then flip and bake other side.
