Oatmeal Muffins

Oatmeal Muffins

1 cup oatmeal
1 cup buttermilk (or sour milk)
1/3 cup butter, softened
1/2 cup brown sugar
1 egg, beaten
1 cup flour
1 tsp. baking powder
1 tsp. salt
1/2 tsp. baking soda

Mix oats with milk.  Stir together butter and sugar.  Add egg.  Sift dry ingredients and add alternately with milk/oats mixture.  Divide into 8 well-greased muffin cups.  Bate at 400º for 20 – 25 minutes.
